365 Days a Year: Feb 21

It was quite a warm day yesterday, so instead of turning on the oven and heating the house any more, I decided to do as much as possible on the BBQ! I was a little nervous about this because the BBQ is usually PK's domain and I usually just do the prep...

It turned out pretty well: Portugese style chicken, with dukkah-crusted sweet potato, caramelised carrots and steamed snow peas. The vegies were actually the easiest as I just wrapped them in a foil package and let the trapped heat and steam cook them through. And because the vegies were all essentially steamed, they were super vibrant and flavourful! Yum!
